Nana and Grandaddy Come for a Visit

Finn was very excited when he woke from his nap Saturday. Nana and Grandaddy were here for a fun visit! We had a fiesta late that afternoon with Lucy, Jason, Miss. Ava and the boys. Having all the family here together was a blast and made me realize that we don't get together enough. Finn and Miss. Ava are only 13 days apart and will be friends forever! Garrison and Parker, when not eating cheese dip, chips and salsa, had fun playing with the "baby" toys. I believe I heard Parker say that baby toys were boring, but it didn't take him long to find some fun!
I spent too much time in the kitchen, so Joey had the camera. He took some good ones, but not enough!










Next weekend we are celebrating Garrison's 8th Birthday so we will all be together again! Yippee!

Bébé Bolognese

I had some friends over for Spaghetti the other night and decided that since Finn has to learn to feed himself (so says his school), it was time for him to taste my good cooking! I've cooked for him before, Lord knows by now I am a master puree-er. But when it comes to savory, one pot wonders, this was new to Finn. If you are wondering if he liked it, what do you think?

He loved it! Ate a huge "tray" full, along with half a banana. This dish is so extremely healthy! Its almost ALL organic and has tons of vegetables.

Ingedients:
  • 1 Tablespoon extra virgin olive oil
  • ½  medium onion
  • 2 medium carrot
  • 1 medium stalk celery
  • 1 clove garlic
  • ½ pound organic lean ground chicken, or turkey ( i used chicken)
  • 1 small can organic, no-salt tomato paste
  • 4 cups chicken or beef stock (homemade or organic, no-sodium store bought)
  • 2 cups whole grain pasta, or even better, Ronzoni Garden Delight vegetable noodles (see picture below)
  • 2 leaves fresh basil (optional)
  • ¼ cup grated Parmesan cheese (optional)

I cooked the noodles first. I actually cooked them longer than the suggested 8 minutes. I wanted them extra soft for Finn to be able to eat using his only 2 teeth. The veggie pasta I used is spiral form. I crunched them up into baby bite size pieces before I cooked them.

Then, brown your organic chicken in the olive oil over medium heat. While that is browning, dice up your vegetables in very small pieces. You don't want them so small that little hands can't pick them up, but you want them small enough not to choke.

Once your chicken is completely done cooking, add your veggies and cook them until tender. Add the tomato paste and stock and simmer for as long as you'd like...at least 20 minutes. Add your basil and you are done! Top with parmesean cheese and once it has cooled, let your baby dig in!

Finn loved it. His cheeks loved it. His chin loved it. His eyebrows loved it.

Tot Lot

Yesterday while daddy golfed, Finn and I went to the park. When I first put him in the swing, he was a little hesitant (he gets that from his dad.)
 But then, his smiles got bigger and bigger, the higher I pushed! (he gets that from his mom)
